Ingredients: 6 large eggs. 3 tablespoons mayonnaise. 2 teaspoons Dijon mustard. 1 teaspoon honey. 1 teaspoon white wine vinegar. 1 tablespoon pickled mustard seeds. Salt and pepper to taste. Chopped fresh chives for garnish.
Instructions: Cover the eggs with cold water and put them in a saucepan. Over medium-high heat, bring the water to a boil. Then, lower the heat to low and let it simmer for 9 to 12 minutes, depending on how runny you want the yolks to be 9 minutes for soft-boiled and 12 minutes for hard-boiled. Put the boiled eggs in a bowl of ice water to cool down completely. Once they are cool, peel them and cut them in half lengthwise. Take the egg yolks out and put them in a different bowl. Use a fork to mash the yolks. Together with the mashed yolks, mix in the honey, Dijon mustard, white wine vinegar, and pickled mustard seeds. Mix well until everything is smooth and creamy. If you want, you can add salt and pepper to taste. Mix the honey mustard yolks and put one into each egg white half. Add some chopped fresh chives as a garnish.
