Indulge in the refreshing flavors of a mojito in these delightful raw dessert squares. Creamy cashews and coconut provide a rich base, while fresh lime juice and mint add a burst of flavor.
Ingredients: 2 cups raw cashews. 1 cup unsweetened shredded coconut. 1/2 cup fresh lime juice. 1/4 cup maple syrup. 1/4 cup coconut oil, melted. 2 tablespoons fresh mint leaves, chopped. 1 tablespoon lime zest. 1/2 teaspoon vanilla extract. Pinch of salt.
Instructions: Put the cashews and coconut shreds in a food processor and pulse them until they are very finely ground. You can put mint leaves, lime zest, melted coconut oil, a pinch of salt, and lime juice into the food processor. Mix until it's creamy and smooth. Put parchment paper around the edges of a square baking dish. Spread the mixture out in the dish. The dish should be frozen for one to two hours, or until it gets firm.
