The 'I think he misses you terribly, just like me' would've been a good way to subtly show remorse in Gabriel, like him sitting at his desk, swiping up Adrien's calendar on his tablet, seeing a picture of his son and then Emilie's on the wall.
Maybe just showing him frowning or flashbacks of their old happy family life?
Something that even hints at Gabriel's guilt.
Also:
"Nathalie is a great help. She does a lot for us-"

Seriously, show more of Gabriel's emotions, even if they are subtle. Being a villain is good and all, but if going for the 'villain being a villain for the sake of his family' I think there needs to be more scenes than the occasional ('My son!' 'I was worried for your safety, Adrien.') In the show. I don't know, just a thought.
