Ingredients: 3 ripe bananas, mashed. 1/2 cup almond butter. 1/4 cup maple syrup. 1 teaspoon vanilla extract. 2 cups gluten-free rolled oats. 1/2 cup shredded coconut. 1/4 cup chopped nuts e.g., almonds, walnuts. 1/4 cup mini chocolate chips optional. 1/4 cup dried cranberries optional.
Instructions: Set the oven to 350F 175C and heat it up. Use cooking spray or parchment paper to grease a 9x9-inch baking dish. Put mashed bananas, almond butter, maple syrup, and vanilla extract in a large bowl. Mix until it's smooth. To the banana mixture, add shredded coconut, chopped nuts, mini chocolate chips if using, and dried cranberries if using. Keep adding things until the mixture is well mixed. Mix everything together well. Using a spatula, spread the mixture out evenly in the baking dish that has been prepared. After the oven is hot, bake for 25 to 30 minutes, or until the edges are golden brown. Let it cool down all the way before cutting it into bars. As a healthy snack or dessert, enjoy!
