Ingredients: 1/2 cup vegan butter, softened. 1/2 cup granulated sugar. 1/2 cup packed brown sugar. 1/4 cup unsweetened applesauce. 1 teaspoon vanilla extract. 1 1/2 cups all-purpose flour. 1/2 teaspoon baking soda. 1/2 teaspoon salt. 1/2 cup vegan chocolate chips. 1/2 cup chopped fresh mint leaves.
Instructions: Preheat oven to 350F 175C and line a baking sheet with parchment paper. In a large bowl, cream together the vegan butter, granulated sugar, and brown sugar until smooth. Beat in the applesauce and vanilla extract until well combined. In a separate bowl, combine the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the vegan chocolate chips and chopped mint leaves. Drop spoonfuls of dough onto the prepared baking sheet and flatten slightly with the back of a spoon. Bake for 10-12 minutes, or until the edges are golden brown. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
