Ingredients: 2 cups fresh or frozen berries e.g., strawberries, blueberries, raspberries. 1 tablespoon chia seeds. 2 tablespoons lemon juice. 1-2 tablespoons honey or maple syrup optional, for sweetness.
Instructions: In a microwave-safe bowl, combine the berries and lemon juice. Microwave on high for 1-2 minutes, or until the berries are soft and starting to break down. Remove the bowl from the microwave and use a fork to mash the berries further. Stir in the chia seeds and honey/maple syrup if using. Microwave for an additional 1 minute to thicken the jam. Let the jam cool for a few minutes before transferring it to a jar or container. Refrigerate for at least 30 minutes to allow the jam to set.
