I know exactly what you mean - I do think it would have benefitted from more time. Miranda's character had to do a lot of growing up and "finding herself" in just one episode. And all that plot in just two episodes did detract from the comedy.

Yeah, I think there was a lot going on in not a lot of time, so I know exactly what you mean. Ending the first episode on a cliffhanger meant that most of the character development etc had to happen in the second episode, which was a lot to fit in!
