A delicious Mexican pasta salad for a side dish, lunch or as a full meal. The advantage of this salad is that it is deliciously healthy, fresh and spicy at the same time.

Ingredients:

Fusilli

2 hard boiled eggs

1 cooked boneless, skinless chicken breast

Mixed lettuce mixture

Jalapeno slices

1 tomatoes

Preperation:

Step 1:

Cook the Fusilli according to the instructions on the package. Cut the hard-boiled eggs into wedges. Slice the chicken. Cut the tomato into pieces.

Step 2:

Mix all the ingredients together.

Ingredients for the Guacamole:

2 ripe avocados

1/4 onion finely chopped

1 Jalapeno finely chopped

1/4 cup Cilantro finely chopped

1 teaspoons of lime juice

tomato finely chopped

salt to taste

Preparation:

Step 1:

Finely chop the onion, Jalapeno, tomato and the Cilanto.

Step 2:

Peel the avocado and remove the core. Mash the avocado in a mortal until it reaches your desired consistency.

Step 3:

Add the onion, Jalapeno, Cilantro, onion and tomato and mix well. Add lime juice and salt to taste.

NB: start with about 1/2 teaspoon and then mix it in. Taste it, and if it isn’t enough, just add a little bit more at a time until it tastes right to you.

Step4:

Stir some of the Guacamole into the salad.
