Ingredients: 1 cup cooked black beans. 1/2 cup cooked quinoa. 1/2 cup breadcrumbs. 1/4 cup finely chopped onion. 1/4 cup finely chopped bell pepper. 2 cloves garlic, minced. 1 teaspoon cumin. 1 teaspoon paprika. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 cup grated cheese optional. 4 burger buns. Lettuce leaves. Tomato slices. Onion slices. Pickles. Ketchup. Mustard.
Instructions: In a bowl, mash the cooked black beans with a fork or potato masher. Add cooked quinoa, breadcrumbs, chopped onion, chopped bell pepper, minced garlic, cumin, paprika, salt, and black pepper to the mashed beans. Mix well. If desired, fold in the grated cheese into the mixture. Divide the mixture into 4 equal portions and shape them into burger patties. Preheat a grill or non-stick skillet over medium heat. Cook the burger patties for about 4-5 minutes per side until they are browned and cooked through. Toast the burger buns on the grill or in a toaster until they are lightly browned. Assemble the burgers by placing lettuce leaves, a burger patty, tomato slices, onion slices, and pickles on the bottom half of each bun. Drizzle with ketchup and mustard, and then top with the other half of the bun. Serve the vegetarian burgers hot and enjoy!
