13th Feb '15 McCarthy's Dingle Long long drive. Beautiful. Stop many times. Take picture. Drop jaw. Begins with breakfast at Levi's. Caroline and Joe, Sheena and Keith. Warm conversation, sun shining off the big spoons on the table, lain across weeping hot tomatoes and chorizo, glistening bacon and sausages... Ends with Tom standing in wind and rain, upon rock on the Dingle peninsula, staring out at wild ocean. Bobbing out on the waves, Tom spies surfers. Surfi. The light is losing. Finally gets back in the car, bristled with cold, he wants to see just 'one more set'. I am learning surf jargon. I know about 'backdoors', and 'closing out', of 'sets' and so on. My first surf lesson was with Colin Macleod on the Isle of Lewis. A fun day that ended with the sharing of a mars bar. Tasted like the best thing against cold, salty lips. Tom yearns. But now is not the time. Get to Dingle and run through the streets. Running just because. A terrible takeaway is had. Poor stomach. McCarthy's is a little cold but the audience warm by the end. Our energy could do with a kick. A slap of fish to the face perhaps. It is a nice evening and people are appreciative. Tom even finds a friend to take him surfing tomorrow. We find a cheap and lovely hostel just out of town. Wake up to a view of the sun on the sea. I take away the room keys.

Marrow The bargain of the week has been enormous marrows from McCarthy's farm shop (turn right out of Wickham Square towards Bishops Waltham) at 45p each, buy one get one free! I bought one for the meals I make for a relative and ended up with the freebie. What to do with a marrow? Here are some ideas: Marrow burgers 2 cups grated marrow flesh, patted dry with a tea towel, if it is very ripe and wet, salt it lightly and drain it in a colander with a weight on it before patting dry. A handful of Parmesan, A cup of breadcrumbs (tear up 2 day old bread and blend it - freeze until you need them), A crushed garlic clove, A bunch of spring onions, finely sliced, use all the green and white parts, A beaten egg, Zest of a lemon and a dessert spoon of the juice, Chopped fresh mint leaves, Salt and pepper, A tablespoon of flour, Olive oil to shallow fry (note: I've gone for the more mediterranean route with parmesan/olive oil/lemon juice/herbs but you could equally go Thai style, substituting coconut flour and milk to bind, adding chillies, coriander, ginger and lime and frying in a plain oil such as sunflower, or curry style with curry powder, yoghurt and mint, or jerk style with jerk seasoning and a few mashed kidney beans and/or a spoonful of cooked rice. Marrow has a mild flavour which can take the spicing). Simply mix the ingredients well, form into burger shapes and shallow fry. Marrow cake I've used lime this time, because I had some in the fridge and I've made a loaf style cake because I had some loaf tin liners my sister gave me. 150g light soft brown sugar, beaten into 150g softened butter, you need extra flour because of the moisture of the marrow so 175g flour, 3 beaten eggs and two heaped handfuls of grated and patted dry marrow flesh. Add a teaspoon of baking powder for extra lift and the zest of three limes. Mix well and pour into the lined loaf tin (2lb size). While it is cooking at 180 degrees for about 45 minutes in a fan oven, make the syrup. Use the juice of the 3 limes with a scant (just under) 50g caster sugar. Simmer and boil until just syrupy. When the cake is done, leave it in the tin. Prick all over with a skewer and pour over the syrup. Leave to cool before removing from the tin. You can reduce the sugar in the syrup to about 35g if you want it zingier. Roasted Mediterranean Veg Try roasting bite sized chunks of squash or pumpkin, peppers, red onions, aubergine along with marrow chunks in olive oil and serve with feta cheese, sun dried tomatoes and green or brown lentils with some lemon juice to brighten the juices as a dressing. Marrow chutney For about 2kg marrow chutney 1 large marrow or 2 small, peeled, deseeded and finely chopped Just under a kilo onions, finely chopped Teaspoon of salt 2 Peeled and chopped apples. I'm using about 8 of the small windfalls from my Dad's trees. Just over a litre of malt vinegar 300g sugar 1 dessertspoon cornflour 1 dessertspoon mustard powder 1 dessertspoon turmeric Mix well in a huge saucepan and gently heat until the sugar has dissolved. Then gradually increase the heat to a boil then simmer until it has reduced enough to see the pan bottom when you drag your wooden spoon through it. Bottle up in sterilised jars (washed and then oven heated or use a sterilising fluid like Milton for baby bottles). Ratatouille Chop the following veg and add them in order to a large saucepan with heated olive oil in. Stir for 5 minutes before adding the next one. Garlic, onion, peppers, aubergine, marrow (or courgette), fresh tomatoes. Then add a can of tomatoes, a can of water, simmer for at least half an hour until all the veg is sweet and soft. Season to taste and use with everything! Ideas: top fish with it and then add cheese or herbed breadcrumbs and bake. Layer up lasagne sheets with it and top with a cheese sauce and bake. Make Bolognaise with it, adding browned mince. And serve with pasta. Make pizza with it. Just add the base and mozzarella. Blend it into a soup. Marrow gratin Finely slice potatoes, marrow (then quarter the slices), tomatoes, onion, layer up in a casserole dish or roasting tin, top with enough breadcrumbs to cover well, mixed with chopped herbs (try mint, oregano, thyme, a little rosemary, parsley) and a handful Parmesan cheese. Season well with salt and pepper and roast slowly, covering with foil if it gets too brown on top before the veg is tender). Curry A pan fried curry really works for marrow, evaporating the excess water as it cooks. Start with crushed garlic cloves and onions as a base, as many as you like, to your taste, fried in a large frying pan with sunflower oil or a similar flavour light oil. Next the spicing. Turmeric, Cumin, about a teaspoon each, continue frying, add a fresh chopped red chilli and salt and pepper, continue frying, add a chopped pepper, preferably red but yellow or green will do - probably best avoid the orange ones for this. Add half an enormous marrow or a whole smaller one, deserved and chopped. Add tomatoes, fresh or canned. Finally, a mug of vegetable stock and cook down until tender and thick. Serve with fresh coriander, rice, plain yoghurt, Naan bread, whatever you like as an accompaniment. Tortilla omelette Two heaped handfuls of chopped marrow, a handful of Parmesan, the zest of a lemon, half a bunch of spring onions, sliced, 6 beaten eggs, goat's cheese or feta, a handful, crumbled, oil to fry. Mix the ingredients in a bowl and pour into a frying pan with 2 dessertspoons of hot oil, fry gently until cooked through and brown under the grill. You can stuff it but I can't see the point of the watery vegetable with the stuffing. I'm going to make the cake, burgers and chutney today with my marrow.
