She was badly injured during NWH. Her heart did stop. When Peter left her, he had no reason to believe she was alive. However! While Happy was arrested, the building was stormed, and May Parker was found. She was taken away in an ambulance, believed to be dead.
Upon arrival to the hospital, she was checked over thoroughly and found that her heart was still beating, although very faintly. The injuries she'd received were brutal. Some pre-built AI instructions took over, however - Tony had done his due diligence - and his own expert team were brought in.
It took several months before she was well enough to go back out into the world. May still bears plenty of scars, aches and pains from her injury. She left her previous home - and doesn't remember why. Happy Hogan is still her friend, and it was decided that, as they didn't know why she'd been attacked - except it had something to do with Spider-Man - that she would be declared dead and moved to a safe house.
The funeral etc still went ahead - the whole interaction w Peter and Happy was still there - but May is still alive. When things feel safer she will return home and back to FEAST, unwilling to leave them behind entirely. And as nobody can remember why she was targeted? Well, there's no reason not to.
