Ingredients: 2 cups all-purpose flour. 1/2 cup granulated sugar. 2 tsp baking powder. 1/2 tsp salt. 2/3 cup milk. 2 large eggs. 2 tbsp melted butter. 1/4 cup maple syrup. 1 tsp vanilla extract. 1 cup heavy cream. 4 egg whites. 1/2 cup maple syrup for meringue. 1/2 cup granulated sugar for meringue. 1/4 tsp cream of tartar. Vegetable oil for frying. Powdered sugar for dusting.
Instructions: In a mixing bowl, combine flour, sugar, baking powder, and salt. In another bowl, whisk together milk, eggs, melted butter, 1/4 cup maple syrup, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms. Transfer the dough to a floured surface and roll it out to 1/2-inch thickness. Using a round cookie cutter, cut out doughnut shapes and transfer them to a baking sheet lined with parchment paper. Set aside to rest for 15 minutes. Heat vegetable oil in a deep fryer or large pot to 350F 175C. Carefully fry the doughnuts in batches until golden brown, about 2-3 minutes per side. Drain on paper towels. In a saucepan, heat 1/2 cup maple syrup until it begins to bubble. Remove from heat and set aside. In a separate bowl, beat egg whites and cream of tartar until soft peaks form. Gradually add 1/2 cup sugar and continue to beat until stiff peaks form. Fold the maple syrup into the meringue mixture. Using a pastry bag, pipe the maple meringue filling into the cooled doughnuts.
