I made Mango bread!!
Originally made by Jeane Chappell, wife of Florida representative in 1966-1968. Her recipe was published in the congressional cookbook later to be found by a bored teen in a thrift shop. The recipe is basically someone making banana bread but ran out of bananas so they put mangos instead. The mango is a lot more muted in flavor but still tasty. Here's the recipe for anyone who wants to try it.
1 stick butter (room temperature)
3/4 cup white sugar
2 eggs
1 tablespoon lemon juice
2 cups flour
1/4 teaspoon cinnamon
1/8 teaspoon ginger
1/8 teaspoon nutmeg
1 teaspoon baking soda
1/2 teaspoon salt (I use sea salt)
1 chopped mango, which should be around a cup worth
1/2 cup chopped nut (For those allergies, sweeten coconut flakes do just fine)
(I also added a teaspoon of vanilla extract to get rid of that eggy smell.)
Directions
Cream butter and sugar then add lemon juice and eggs beating well. Sift all the dry ingredients and add it to the wet mixture, then fold in the mango and nuts or coconut.
Bake in a loaf pan at 325 for an hour
