These easy baked macaroni and cheese muffins are a fun twist on a classic comfort food. Perfect for serving individually or as a side dish for parties or family dinners.
Ingredients: 2 cups elbow macaroni, cooked and drained. 2 tablespoons butter. 2 tablespoons all-purpose flour. 1 cup milk. 2 cups shredded cheddar cheese. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 cup breadcrumbs. 1 tablespoon grated Parmesan cheese.
Instructions: Warm the oven up to 375F 190C and grease a muffin tin. Melt the butter in a saucepan over medium-low heat. Add the flour and mix it in until the mixture is smooth. Add the milk slowly while stirring all the time until the mixture gets thick. Turn down the heat and add the salt, pepper, and shredded cheddar cheese. Mix the sauce and cheese together until the sauce is smooth. Mix the cooked macaroni with the cheese sauce, making sure it's covered all over. Fill each muffin tin cup all the way to the top with the macaroni and cheese mixture. Grate Parmesan cheese and put breadcrumbs in a small bowl. Sprinkle it on top of the muffins with mac and cheese. After the oven is hot, bake for 20 to 25 minutes, or until golden and set. Let the muffins cool a bit in the pan before taking them out. Enjoy while still warm!
