Ingredients: 1 cup all-purpose flour. 1/2 cup unsalted butter, softened. 1/2 cup granulated sugar. 2 large eggs. 1/4 cup sour cream. 1 teaspoon vanilla extract. 1/2 teaspoon baking powder. 1/4 teaspoon baking soda. 1/4 teaspoon salt. Zest of 2 limes. 2 tablespoons lime juice. 1 cup powdered sugar, for glaze. 2 tablespoons milk, for glaze. Fresh berries for garnish.
Instructions: Preheat the oven to 350F 175C. Grease and flour mini Bundt cake molds. In a bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Mix in sour cream, vanilla extract, lime zest, and lime juice until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Divide the batter evenly among the mini Bundt cake molds. Bake for 15-18 minutes or until a toothpick inserted comes out clean. Allow the cakes to cool in the molds for 10 minutes, then transfer to a wire rack to cool completely. For the lime glaze, whisk together powdered sugar and milk until smooth. Drizzle the glaze over the cooled mini Bundt cakes. Garnish with fresh berries and additional lime zest. Serve and enjoy!
