The lemon roasted potatoes are a zesty and tasty side dish that goes well with many main dishes. When you mix lemon juice and zest with potatoes, they get brighter, and garlic and thyme give them a savory smell.
Ingredients: 1.5 lbs baby potatoes, halved. 3 tablespoons olive oil. 2 cloves garlic, minced. 1 lemon, juiced and zested. 1 teaspoon dried thyme. Salt and pepper to taste.
Instructions: Get the oven ready by heating it up to 400F 200C. Add the potatoes to a large bowl and mix in the lemon juice, zest, salt, pepper, and minced garlic. Toss the potatoes until they are well covered. Put the potatoes on a baking sheet that has been lined with aluminum foil or parchment paper. Spread them out in a single layer. Put the potatoes in an oven that has already been heated for 25 to 30 minutes, or until they are soft and golden brown. Flip them over halfway through cooking to make sure they brown evenly. When it's done, take it out of the oven and serve it hot.
