Ingredients: 2 cups shredded coconut. 1 cup almond flour. 1/2 cup powdered sugar. 2 large egg whites. 1/4 cup granulated sugar. Zest of 2 lemons. 1 teaspoon lemon extract. Pinch of salt.
Instructions: Preheat the oven to 325F 160C and line a baking sheet with parchment paper. In a mixing bowl, combine the shredded coconut, almond flour, and powdered sugar. In a separate bowl, whisk the egg whites until frothy. Gradually add the granulated sugar while continuing to whisk until stiff peaks form. Gently fold the lemon zest, lemon extract, and pinch of salt into the egg white mixture. Carefully fold the egg white mixture into the dry ingredients until well combined. Using a small cookie scoop or spoon, drop spoonfuls of the batter onto the prepared baking sheet. Bake in the preheated oven for about 15-18 minutes, or until the macaroons are golden brown around the edges. Remove from the oven and let the macaroons cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
