Let's talk about High Fructose Corn Syrup. So in my studies this week I have been learning a lot about how much of a difference there has been over time with the increase in High Fructose Corn Syrup in our foods. It is something we have been working hard to get out of ours and the kiddos diets for some time now, really limiting all types of sugars. Did you know that 56 different names (there may be more, but these are the ones I know for sure). Anyway back to my original thought. High fructose corn syrup first started to appear in the American food system sometime around the 1970's. When it was first introduced it only accounted for 0.5% in sweetener use but by the year 2000 it accounted somewhere around half of the sweetened food supply. So why such a jump? Well the increase came do to subsidies and policies that helped to increase corn farming and production. So what happened when studies were done on the effects of high fructose corn syrup? When the first animal and human studies showed a correlation between high fructose corn syrup and obesity & diabetes it was all over the media, but more current large scale studies have not shown a correlation between high fructose corn syrup and these illnesses when consumed in a reasonable amount. The problem that I found is that none of these show long term results. Also all the studies talk about high fructose corn syrup being of no more risk than any other sugar when consumed in a reasonable amount. The problem with that is that the average American diet has more than 10% of their daily calories coming from sugar. So tell me how many names do you know for sweeteners in our foods???
