My first attempt at yeast rolls, and aside from some sizing problems (my fault), they have a perfect bake & are pretty tasty.
Ingredients:
2.5 TBSP of yeast
2 cups warm milk (heated to 100/110 F, do not boil)
1/2 cup warm water
3 TBSP butter
1 TBSP of sugar
7 cups of all purpose flour
1 tsp of salt.
Combine all wet ingredients plus yeast in a large bowl, set aside until yeast is bubbly (10 min).
Add 5 cups flour to the wet mixture. Mixture will be sticky and shredded, not forming into a ball just yet.
Now the original recipe called for adding the remaining 2 cups of flour in 1/2 cup increments until it was all incorporated, but once I got the 6th cup in, the dough felt pretty good, so I only used 6 cups plus a little extra on the counter (maybe 1/8th cup).
Turn out the dough onto your kneading area and knead until surface is smooth and springs back, and isnt sticky anymore.
Let rise in covered bowl for 20 minutes @ room temp.
Once risen gently deflate, pat into an 8 x 12 rectangle and cut into 4 even strips of dough 22 inches long.
Cut each strip into 6 even rolls. Now you can either place on sheets or pans or pie tins or whatever and a) let rise as is or b) form into balls and then let rise in said pans. I did balls. This is a 20ish minute rise at room temp as well. (I preheated my oven at this time. 350 degrees)
Bake @ 25 minutes 350 degrees F.
Yeilds 24 rolls.
Brush with butter if desired.
