Ingredients: 4 lamb chops. 1/2 cup cornmeal. 2 tablespoons Cajun seasoning. 1 teaspoon garlic powder. Salt and pepper to taste. 2 tablespoons olive oil.
Instructions: Before you start cooking, heat the oven to 375F 190C. Put cornmeal, Cajun seasoning, garlic powder, salt, and pepper in a shallow bowl. A paper towel can be used to dry the lamb chops. Cover each lamb chop with the cornmeal mix and press it onto the chops to make it stick. Warm up the olive oil in a skillet that can go in the oven over medium-high heat. Grill the lamb chops for two to three minutes on each side, or until they turn golden brown. Place the skillet in an oven that has already been heated. Bake for an extra 10 to 12 minutes for medium-rare, or longer if you want it more done. After taking the lamb chops out of the oven, let them rest for a few minutes.
