A Timesaving Tip for Freezing Corn
I am not finished with the series on different herbs and their value but I wanted to interject a post in here on my best tip for freezing corn before it is too late to freeze any this year.
Every year I try and freeze 100 ears of sweet corn. I am very concerned about GMO's and much corn is modified in this way. I don't buy sweet corn in the store so I have to freeze what I can. I make it a point to buy from our local farmer who is one of the most knowledgeable people I know about agriculture and he makes sure I get corn that is not genetically modified even if he doesn't grow corn that particular year.
Freezing corn is a rather messy business and a few years ago I picked up a tip that has really helped me. I cut the corn off with a knife and the corn cob propped up in the middle of a bundle pan. Then the corn flies off into the pan and not all over my kitchen. Let me demonstrate with the photos below.
