Ingredients: 1 block soft tofu. 1 cup kimchi, chopped. 150g pork belly, sliced. 2 cloves garlic, minced. 1 small onion, sliced. 2 green onions, chopped. 1 tbsp soy sauce. 1 tbsp gochugaru Korean red pepper flakes. 1 tbsp sesame oil. 2 cups water or vegetable broth. Salt, to taste.
Instructions: In a pot, heat sesame oil over medium heat. Add garlic, onion, and pork belly. Saut until pork is browned. Add chopped kimchi and continue to cook for another 3-5 minutes. Pour in water or vegetable broth and bring to a gentle boil. Carefully add soft tofu, breaking it into chunks. Season with soy sauce, gochugaru, and salt. Simmer for 5-7 minutes until flavors meld together. Garnish with chopped green onions before serving.
