Big soup pan -- put in at least 2 chicken breasts and maybe 2 thighs (if boneless, makes it really easy to prepare your soup) You can instead put in any amount, less or more of any kind of chicken parts. Cover with water - and add water to the level that you'd like to make soup to minus an inch or so. Add in any longer-cooking veggies you're going to use - like chopped up celery, onions (regular or the long green onions) Add in a can or two of chicken broth (if you have it and want to use it - it never hurts) Add 1/3 cup or so of this chicken bouillon - my big secret ingredient -- Knorr's Caldo de Pollo chicken flavor bouillon. You can skip the actual chicken broth if you use enough of this stuff - it adds a wonderful flavor. Stir, and bring to a boil slowly - then turn to simmer where it will just barely keep bubbling - leave that on for an hour or so. About 40 minutes in, add in chopped carrots, peas, broccoli, bok choy, potatoes, etc. (use just one or two or all of those - for the soup you all loved, I added my celery and chopped up green onions right away and 40 minutes in, added chopped carrots and potatoes. Your family will figure out which ones you love to have in the soup - or you just use whatever's starting to get a little wilty in the frig :)). Let it all get hot enough to boil again, and then turn to simmer again for that last 20-30 minutes, or until the carrots are just barely done, not overcooked. Take out the chicken and put it in something where you can cut it up - or tear it apart - little chunks or big, or torn strips, whatever. Throw it back into the mix. Taste your broth -- if it's lacking something, throw in a little more of the bouillon until the flavor suits you. NOW - while it's all hot and has been doing all that boiling, simmering -- take a whole $2.18 package of spinach (at Walmart :)) and slice it up a bit on your cutting board, and then dump it all in the soup. Stir it into the hot broth, put a lid on the soup and turn off the heat. Let it sit about 10 minutes and stir again - and you are ready to eat some yummy stuff! The celery and bok choy, all cut up, add a lot of nutrition as well as bulk, to the soup and help make it really filling. Of course, you can instead start out the soup with the chicken, celery and a cup to a cup and a half of brown rice, if you like rice in your soup instead of potatoes. You can leave out the potatoes if you want pretty delicious nearly carb-free soup. Or you can leave out the potatoes and instead at the end, before you put in the spinach, add in some whole wheat noodles and let them cook until done, then add the spinach at the end as above.
