Indian Food for large groups - help?
I work at a children's camp as the cook, and I'm currently debating whether or not an Indian food meal would be feasible. I have access to ovens, a stove top, and a griddle. Deep frying would be out of the question. I have some limitations on what I can order through our food delivery service, and with our age ranges, some of the more spicy foods may not be the best idea.
I saw this post and I'm thinking of doing ground turkey kheema with naan on the side (which I can order through my food distributor), but I was curious to know if anyone else has any suggestions?
The peas might be served on the side, as the camp I'm at tends to "deconstruct" meals so that kids can mix and match in ways that makes them comfortable, though I'll still cook them with the spices. I'm thinking of also serving it with rice, though it won't be jasmine rice, as I have to use what we already have in camp.
If anyone has any ideas/comments, I'd appreciate them! Even if it's to tell me this is a horrible idea lol, I've had them in the past, and I'd much rather someone noticed before I ordered the food!
