Kanji Vada Soup is a traditional Indian dish made of lentil fritters soaked in water that tastes like mustard. This soup is great for hot summer days because it is cool and sour. The tangy kanji and crispy vadas go well together because they have different tastes and textures.
Ingredients: 1 cup urad dal black gram lentils. 2 cups water. Salt to taste. 1/2 tsp turmeric powder. 1/2 tsp red chili powder. 1/2 tsp asafoetida hing. 2 cups water for soaking vadas. Oil for frying vadas. 2 cups mustard-flavored water kanji. 1/4 cup chopped onions. 1/4 cup chopped coriander leaves. 1/4 cup grated carrots.
Instructions: Soak urad dal in 2 cups of water for 4 hours. Drain water and grind dal into a smooth paste. Add salt, turmeric powder, red chili powder, and asafoetida to the paste. Mix well. Heat oil in a pan. Wet your hands and take small portions of the batter. Flatten them slightly and fry until golden brown. Drain excess oil and soak in water for 30 minutes. In a serving bowl, pour mustard-flavored water kanji. Place soaked vadas in the kanji. Garnish with chopped onions, coriander leaves, and grated carrots. Serve chilled.
