This pasta dish is only for adults. It's very rich, thanks to the pancetta and Parmesan, and creamy, thanks to the white wine sauce. Great for a romantic dinner or a special event.
Ingredients: 300g linguine pasta. 2 tablespoons olive oil. 4 cloves garlic, minced. 200g pancetta, diced. 1/2 cup dry white wine. 1 cup heavy cream. 1 cup grated Parmesan cheese. Salt and pepper to taste. Chopped fresh parsley for garnish.
Instructions: Follow the directions on the package to cook linguine until it is al dente. Remove the water and set it aside. Warm up the olive oil in a big pan over medium-low heat. It will take about 5 minutes of cooking after adding the minced garlic and diced pancetta until the pancetta is crispy and the garlic smells good. Use white wine to clean out the pan and scrape up any browned bits on the bottom. Let the wine cook down for about two to three minutes. Add the heavy cream and grated Parmesan cheese. Simmer for about 5 minutes, or until the sauce gets a little thicker. When you add the cooked linguine to the pan, toss it around so that the sauce covers all of it. Add pepper and salt to taste. Before serving, sprinkle with chopped fresh parsley. Enjoy while hot!
