Creamy Coconut Mojito Ice Pops offer a refreshing twist on the classic mojito cocktail, with creamy coconut milk, zesty lime, and fresh mint flavors. These frozen treats are perfect for cooling down on hot summer days or for a tropical-themed party.
Ingredients: 2 cups coconut milk. 1/2 cup cream of coconut. 1/4 cup fresh lime juice. Zest of 1 lime. 2 tablespoons finely chopped fresh mint leaves. 2 tablespoons rum optional. 1/4 cup powdered sugar. 1/2 teaspoon vanilla extract.
Instructions: In a mixing bowl, combine coconut milk, cream of coconut, lime juice, lime zest, mint leaves, rum if using, powdered sugar, and vanilla extract. Stir until well combined. Pour the mixture into ice pop molds, leaving a little space at the top for expansion. Insert ice pop sticks into the molds. Freeze for at least 4 hours or until solid. To remove the ice pops from the molds, run warm water over the outside of the molds for a few seconds to loosen them.
