These red, white, and blue ice pop bites are a festive and refreshing treat perfect for summer gatherings. Made with real fruit and coconut milk, they are dye-free and bursting with flavor.
Ingredients: 1 cup strawberries, hulled and chopped. 1 cup blueberries. 1 cup coconut milk.
Instructions: Puree strawberries in a blender until smooth. Fill one-third of each ice pop mold with the strawberry puree. Freeze for 30 minutes. Meanwhile, blend the blueberries until smooth. After 30 minutes, remove the molds from the freezer and pour the blueberry puree over the frozen strawberry layer, filling another third of the mold. Freeze for another 30 minutes. Finally, pour coconut milk over the blueberry layer to fill the remaining third of the molds. Insert sticks and freeze until solid, about 4 hours or overnight.
