Watermelon Ice-Pops
The best way to cool off on a hot Summer day (i.e. today) when you can't choose between a popsicle or a cocktail: Watermelon Ice-Pops. You can also make them alcohol-free by replacing the limoncello with more lemon juice.
Ingredients (makes 2):
1 cup diced and seeded watermelon
1 tablespoon white sugar
1 tablespoon lemon juice
2 tablespoons limoncello
Place watermelon, sugar, lemon juice and limoncello Β in a blender. Blend until smooth. Pour into ice-pop molds and freeze for at least six hours.
