Ingredients: 6 cups chicken broth. 1/4 cup soy sauce. 1/4 cup rice vinegar. 1 tablespoon sesame oil. 1 tablespoon cornstarch. 2 eggs, beaten. 8 ounces tofu, diced. 1/2 cup bamboo shoots, sliced. 1/2 cup shiitake mushrooms, sliced. 1/4 cup green onions, chopped. 1 teaspoon ginger, minced. 1 teaspoon garlic, minced. Salt and pepper to taste.
Instructions: In a large pot, bring chicken broth to a boil. In a small bowl, mix soy sauce, rice vinegar, sesame oil, and cornstarch until smooth. Slowly pour the soy sauce mixture into the boiling broth, stirring constantly. Reduce heat to medium-low and let simmer for 5 minutes. Slowly pour beaten eggs into the soup, stirring gently to create ribbons. Add tofu, bamboo shoots, shiitake mushrooms, green onions, ginger, and garlic to the soup. Season with salt and pepper to taste. Simmer for another 5 minutes until vegetables are tender. Serve hot and garnish with additional green onions if desired.
