Savor the delightful combination of crispy puff pastry filled with creamy mashed potatoes, gooey cheddar cheese, and savory bacon. These Bacon, Cheddar, and Potato Hot Pockets are perfect for a tasty snack or crowd-pleasing appetizer.
Ingredients: 1 sheet of puff pastry, thawed. 1 cup mashed potatoes. 1 cup shredded cheddar cheese. 1/2 cup cooked and crumbled bacon. 1 egg, beaten for egg wash.
Instructions: Warm the oven up to 400F 204C and put parchment paper on a baking sheet. Flour a surface and roll out the thawed puff pastry. The pastry sheet should be cut into rectangles that are about 4x6 inches. Put mashed potatoes, shredded cheddar cheese, and bacon bits in a bowl and mix them together. On one half of each rectangle of pastry, put a large spoonful of the potato mixture. Making a pocket with the pastry and filling, fold it over and press the edges together with a fork. Beat an egg and use it to brush the tops of the pockets to make them golden. Once the baking sheet is ready, put the hot pockets on it. The pastry should be baked in a hot oven for 15 to 20 minutes, or until it is golden and puffy. Take them out of the oven and let them cool down a bit before you serve them. As a snack or starter, these Bacon, Cheddar, and Potato Hot Pockets are great!

Vegan cheese hotpocket version no. 1 because I keep craving them but I hate nestle more:

Changes: instead of almond milk I used a vegan garlic butter sauce since the cheese hotpockets usually have a "buttery garlic crust" so to make that you'll need: •half a stick of (plant) butter •about a tablespoon of flavored olive oil from a jar of sundried tomatoes (that's just my signature I think it tastes better) •some Italian herb seasoning and extra parsley flakes • a big shake of garlic powder probably like 1/4 teaspoon, microwave then baste it over the top and bake it on. It's delicious.
For cheeses I used follow your heart mozzarella shreds and a mix of Chao queso slices, and a bit of leftover vegan mozzarella which tasted exactly the same called "Vevan Mozza-melts" (spelled like that yes)
I think if I do make this again I'll use a baking powder based pizza dough, or maybe less yeast because hotpockets aren't usually very fluffy like this, otherwise great recipe highly recommend. I ended up with 12 pockets (5 big 7 small) the recipe is supposed to make 8
