Ingredients: 300g self-raising flour. 50g vegan butter. 50g light brown sugar. 1 tsp ground cinnamon. 1/2 tsp ground ginger. 1/4 tsp ground nutmeg. 1/4 tsp ground cloves. 150ml oat milk. 1 tbsp apple cider vinegar. 1 tsp vanilla extract.
Instructions: Preheat the oven to 200C 390F and line a baking tray with parchment paper. In a small bowl, mix the oat milk and apple cider vinegar. Let it sit for 5 minutes to curdle. In a large mixing bowl, combine the self-raising flour, vegan butter, light brown sugar, cinnamon, ginger, nutmeg, and cloves. Add the oat milk mixture and vanilla extract to the dry ingredients. Mix until a dough forms. Turn the dough out onto a floured surface and gently knead a few times. Pat the dough into a circle about 2cm thick. Use a cookie cutter to cut out scones and place them on the prepared baking tray. Bake for 12-15 minutes, or until the scones are golden brown and cooked through.
