These adorable hedgehog cookies are not only delicious but also fun to make. The combination of crunchy walnuts and sweet chocolate chips creates a delightful texture, while the almond spikes and eyes give these cookies their hedgehog charm.
Ingredients: 1 cup butter, softened. 1 cup powdered sugar. 2 cups all-purpose flour. 1/2 teaspoon vanilla extract. 1/4 teaspoon salt. 1 cup finely chopped walnuts. 1/4 cup mini chocolate chips. Whole almonds for decorating.
Instructions: Preheat the oven to 350F 175C. In a mixing bowl, cream together the softened butter and powdered sugar until light and fluffy. Add the vanilla extract and mix until well combined. Gradually add the all-purpose flour and salt, mixing until a dough forms. Stir in the finely chopped walnuts and mini chocolate chips. Take a small portion of dough and roll it into a ball, about the size of a walnut. Place the dough balls onto a baking sheet lined with parchment paper, spacing them apart. Gently press two whole almonds into each dough ball to create the 'hedgehog spikes' and 'eyes'. Bake in the preheated oven for about 12-15 minutes, or until the edges of the cookies are golden brown. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once the cookies are completely cooled, they are ready to be enjoyed!
