These Instant Pot Egg Bites are easy to make and taste just like the ones you can get at Starbucks. You can make a tasty, protein-rich breakfast or snack by adding your favorite ingredients.
Ingredients: 4 large eggs. 1/2 cup cottage cheese. 1/2 cup shredded Gruyere cheese. 1/4 cup grated Parmesan cheese. 1/4 cup diced cooked bacon. 1/4 cup finely chopped spinach. 1/4 cup diced red bell pepper. 1/4 cup diced green onions. 1/2 teaspoon salt. 1/4 teaspoon black pepper. Cooking spray.
Instructions: In a blender, combine eggs, cottage cheese, Gruyere cheese, and Parmesan cheese. Blend until smooth. Stir in bacon, spinach, red bell pepper, green onions, salt, and black pepper. Grease the silicone egg mold with cooking spray. Pour the egg mixture into the molds, filling each about 2/3 full. Add 1 cup of water to the Instant Pot and place the trivet inside. Place the filled egg mold on the trivet. Close the Instant Pot lid, set the valve to 'Sealing', and select 'Pressure Cook' for 8 minutes on high pressure. Once done, allow a natural release for 5 minutes, then quick release any remaining pressure. Carefully remove the egg mold from the Instant Pot and let it cool for a few minutes. Gently pop the egg bites out of the mold and serve warm. Optional: Top with additional cheese, bacon, or herbs for garnish.
