ふぐひれ酒 // Fugu (Blowfish) Hirezake Hirezake is a really special way of serving sake. A dried fugu fin (hire) is seared and then steeped in a covered cup of hot sake. When you remove the cover, you light a match over the rim of the cup to burn off the vaporized alcohol. This leaves it with an incredible nutty, earthy, rich flavor that’s just unforgettable (and not fishy, I promise!).
