Ingredients: 4 large eggs. 2 tablespoons butter. Salt and pepper to taste. 1/4 cup milk optional. Grated cheese optional. Chopped herbs optional.
Instructions: Put the eggs in a bowl and beat them with a fork until they are well mixed. Put the butter in a nonstick skillet that is on medium-low heat. The eggs should be added after the butter has melted and become foamy. Use a spatula to gently stir the eggs, moving them from the edges to the middle. Add salt and pepper to taste to the eggs. If you want it creamier, you can add milk. Stir and fold the eggs some more until they are mostly set but still a little runny. If you want, you can top the eggs with grated cheese and chopped herbs. Add one more minute of cooking time or until the cheese melts and the eggs are done but still have some moisture left in them. Take it off the heat right away to keep it from cooking too much. Serve hot, and if you want, add more herbs on top.
