A delightful take on classic hummus, this Herbed White Bean Hummus is loaded with fresh herbs like parsley, cilantro, and dill. This tasty and nutritious dip is great for parties, snacks, or as a sandwich spread.
Ingredients: 2 cans 15 ounces each white beans, drained and rinsed. 3 cloves garlic, minced. 1/4 cup fresh lemon juice. 1/4 cup tahini. 2 tablespoons olive oil. 1 teaspoon ground cumin. 1/2 teaspoon salt. 1/4 teaspoon black pepper. 1/4 cup fresh parsley, chopped. 1/4 cup fresh cilantro, chopped. 1/4 cup fresh dill, chopped.
Instructions: Add the fresh lemon juice, tahini, olive oil, ground cumin, salt, and black pepper to the white beans in a food processor. As needed, scrape down the sides of the bowl to make sure the mixing is even. Blend until smooth and creamy. Put in the fresh parsley, cilantro, and dill. Pulse the food processor until the herbs are well mixed in and the hummus is green with herb spots. If you want, you can add more salt, lemon juice, or olive oil after tasting to change the seasonings. Put the white bean hummus with herbs in a bowl for serving and add a little more olive oil on top. If you want, you can add more fresh herbs as a garnish. You can dip crackers, fresh vegetable sticks, or pita bread in this.
