Middle eastern food dabbling continues with kofte with homemade pita. You can’t see the kofte, they’re under the salad! However, the recipe, from here is excellent; the only tweak I made was subbing in chopped walnuts for pine nuts, which in the US seem more expensive than gold. My pita recipe was from here, but made with 80% AP and 20% wheat flour instead of all whole wheat, and 1/2 tsp commercial active dry yeast as well as starter. The “Halal Guy” White Sauce recipe, which I also put on the lahmacun, is here.
Maybe I should just open a pushcart and call it The Not Even Close To Kosher Guy.
