Anger is not something come easily to Sumia. If anything else it would take a great deal of provocation for her to truly get angry and even then it would take a certain kind of provocation to get that sort of reaction out of her. An easy way for her to get angry is by threatening those who are indeed dear to her or trying to harm someone who can not defend themselves. Her family should be noted to be off limits unless you really want to piss her off incredibly quickly.
When she does actually get angry she does still keep some of her calmness as her kind of anger is somewhat subdued in comparison to others in making her looking almost serene in her anger and is in fact more scary to witness in a sense.
In regards to Ayame this is mostly the same as that is one of the things that did carry on from her life as Sumia. She does tend to get exasperated and/or frustrated a bit more easily, mostly when dealing with incompetence or with his grace, King Izana’s jokes. However, that too would still take some to wear her down. Her anger in turn can be be trigger by by trying to threatening King Izana as he is perhaps one of the only people she actually cares for greatly at the present moment.
