Ingredients: 1 whole chicken, 4-5 lbs. 1/4 cup kosher salt. 1/4 cup brown sugar. 2 tablespoons paprika. 2 tablespoons black pepper. 1 tablespoon garlic powder. 1 tablespoon onion powder. 1 teaspoon cayenne pepper. 1 cup hickory wood chips, soaked in water. 1 cup Kansas City Style BBQ Sauce.
Instructions: Pat the chicken dry with paper towels. In a bowl, mix kosher salt, brown sugar, paprika, black pepper, garlic powder, onion powder, and cayenne pepper to create a dry rub. Rub the dry rub evenly over the entire chicken, including under the skin and inside the cavity. Let it marinate in the refrigerator for at least 4 hours or overnight. Preheat your smoker to 225F 107C. Add soaked hickory wood chips to the smoker box or charcoal for a smoky flavor. Place the marinated chicken in the smoker and cook until the internal temperature reaches 165F 74C, usually about 3-4 hours depending on the smoker and chicken size. During the last 30 minutes of smoking, brush the chicken with Kansas City Style BBQ Sauce for a sweet and tangy finish. Once the chicken is cooked and has a beautiful smoky flavor, remove it from the smoker and let it rest for 15 minutes before carving. Serve the smoked chicken with extra Kansas City Style BBQ Sauce on the side for dipping.
