Ingredients: 500g ground lamb. 1/2 cup breadcrumbs. 1/4 cup finely chopped onion. 2 cloves garlic, minced. 1 tsp ground cumin. 1 tsp ground coriander. 1/2 tsp ground cinnamon. Salt and pepper to taste. 2 cups mixed salad greens. 1 cucumber, diced. 1 tomato, diced. 1/4 red onion, thinly sliced. 1/4 cup fresh parsley, chopped. 1/4 cup fresh mint, chopped. Juice of 1 lemon. 2 tbsp olive oil. Yogurt or tahini sauce for serving.
Instructions: In a large mixing bowl, combine ground lamb, breadcrumbs, chopped onion, minced garlic, ground cumin, ground coriander, ground cinnamon, salt, and pepper. Mix well to combine all ingredients. Shape the mixture into small kofta meatball shapes and thread them onto skewers. Preheat a grill or grill pan over medium-high heat. Grill the lamb kofta for about 8-10 minutes, turning occasionally, until they are cooked through and have a nice char on the outside. While the lamb kofta is cooking, prepare the salad. In a large bowl, combine the mixed salad greens, diced cucumber, diced tomato, thinly sliced red onion, chopped parsley, and chopped mint. In a small bowl, whisk together the lemon juice and olive oil to make a dressing. Pour the dressing over the salad and toss to coat everything evenly.
