Cookies with graham cracker toffee, chocolate, and pecans that are delicious and simple to make.
Ingredients: 12 graham cracker sheets. 1 cup unsalted butter. 1 cup light brown sugar. 1/2 teaspoon vanilla extract. 1 cup semi-sweet chocolate chips. 1/2 cup chopped pecans.
Instructions: Start by heating the oven to 350F 175C. Put parchment paper on the bottom of a baking sheet. Put the graham cracker sheets on the baking sheet in a single layer. If you need to, break them up to cover the whole surface. Melt the butter and brown sugar together in a saucepan over medium heat. Once the mixture starts to boil, turn down the heat. Let it cook on low heat for 5 minutes, stirring every now and then. After taking the pan off the heat, add the vanilla extract and stir it in. Pour the butter-sugar mix over the graham cracker layer and use a spatula to spread it out so that it covers all the crackers. Put it in an oven that is already hot and bake for about 7 minutes, or until the toffee layer is golden and bubbly. As soon as you take the baking sheet out of the oven, sprinkle the chocolate chips on top of the hot toffee. Let them sit for a few minutes to soften. Then, use a spatula to make an even layer of melted chocolate. Put the chopped pecans on top of the chocolate layer that has been melted and gently press them in to stick. Let the cookies cool all the way down on a wire rack in the baking sheet. Plus, you can put the baking sheet in the fridge to cool it down even faster. After the cookies have cooled down and the chocolate has hardened, break them up into different sizes. Serve and have fun! You can keep these cookies for up to a week in a container that doesn't let air in.
