This quick and tasty noodle soup is full of healthy bok choy, fragrant ginger, and garlic. It only takes 20 minutes to make and is great for a cozy weeknight dinner.
Ingredients: 6 cups vegetable broth. 6 oz rice noodles. 3 cloves garlic, minced. 2 tbsp fresh ginger, grated. 4 bok choy heads, chopped. 2 tbsp soy sauce. 1 tbsp rice vinegar. 1 tsp sesame oil. 1/4 cup green onions, chopped. Salt and pepper to taste. Crushed red pepper flakes for garnish optional.
Instructions: Bring vegetable broth to a boil in a big pot. Add the rice noodles to the boiling broth and cook for the amount of time specified on the package, which is usually 4 to 6 minutes. If you want to add more flavor, chop some bok choy and mince some garlic in the last two minutes of cooking. Add the green onions, soy sauce, rice vinegar, and sesame oil. Add pepper and salt to taste. Take the noodles off the heat when the bok choy is soft. Serve hot, and if you want, top with crushed red pepper flakes.
