Ingredients: 2 cups graham cracker crumbs. 1/2 cup unsalted butter, melted. 1/4 cup granulated sugar. 2 cups cream cheese, softened. 1 cup granulated sugar. 3 large eggs. 1/4 cup sour cream. 1/4 cup heavy cream. 1 tablespoon lemon zest. 1 tablespoon lemon juice. 1 teaspoon vanilla extract. 1/4 cup crystallized ginger, finely chopped.
Instructions: Preheat the oven to 325F 163C and line a 9x13-inch baking dish with parchment paper. In a bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup granulated sugar. Press the mixture evenly into the bottom of the prepared baking dish. In a large mixing bowl, beat the cream cheese and 1 cup granulated sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition. Mix in the sour cream, heavy cream, lemon zest, lemon juice, and vanilla extract until well combined. Fold in the crystallized ginger. Pour the cheesecake batter over the crust in the baking dish. Bake in the preheated oven for 25-30 minutes or until the edges are set and the center is slightly jiggly. Remove from the oven and let it cool to room temperature. Refrigerate the cheesecake bars for at least 4 hours or preferably overnight to set. Once chilled and set, slice into bars and serve.
