Manchego.
With all due respect to the other cheeses of the world, manchego has a flavor and texture that would, in a single cheese universe, allow for the widest variety of applications.
Grilled cheese, macaroni, casseroles, toads in the hole, polenta, burgers, omelets, etc, etc, etc, because it has good melting properties without being runny or crumbly. And while itβs mild enough to match a variety of cuisines, thereβs enough character to prevent it from being boring on its own.
Most importantly, itβs nice with red wine, which a number of other excellent cheeses are not.
