Well, for a starting point, which Tatennant pairing do you think would fit into this best?

I would say all the Tatennant pairings would really work well in this AU. 

Ten/John and Donna would probably be the best. I can see his hair working perfectly with the uniform. He's excited about travelling and exploring, very much like Donna. I think he's one of the newer, younger pilots so his enthusiasm for flying is very contagious.

Peter and Nellie would probably be the pairing with the most flirting and sexytimes during their spare time on the plane. 

Alec is the stoic and series head pilot, smiles are rare with him because he saves them for Sarah. He's hard to work with because in my head, he's a perfectionist and he wants everything to be running smoothly. Sarah loves the way he takes it upon himself to ensure the safety of all the passengers and tries to help him.

Ben and Bea bickering on and off duty is a given but he's always jealous when a passenger pays too much attention to her. In my head, they're in a relationship but keeps it a secret because they've been fighting for so long and if others know that they're a couple, they'd probably be laughed at. But I think they already know they're a couple. They're just trying to see how long they can keep up the pretence.
