1- what do you think is the appeal of their dynamic?
Oooo boy! Long post ahead xD (ooops!)
Edith & St. Cloud have a slow burn/opposites attract romance (literally knew each other for about 10-12 years and don't get together until Season 5's "Spanakopita"). But their 10 year friendship helped develop their chemistry.
St. Cloud isn't the easiest person to deal with but Edith treats him like a person, is patient with him, cares about him and is willing to spend hours going over his medical file or chatting with him or spending hours discussing their special interests and discovering/learning about each other.
Even when they were just friends they were literally hanging out at her modest normal apartment eating pizza and he'd play board games with her. He's so comfortable around her and he thinks the world of her (man was crushing hard but wanted her to feel comfortable to come to him with her own feelings. He would wait forever for her).
They do have small head-butt moments but nothing they can't handle or talk about (a lot of things stem from how they were raised and the bubbles they come from so they learn to talk things through and see what they can do to accommodate the other, etc.)

I headcanon that Augustus St. Cloud grew up overprotected and was handed everything and was never allowed to do things for himself. And the one time he TRIED to do anything for himself (Quizboys), it blew up in his face. He was stuck in his bubble because of his health and how his parents treated him. And then he was made trust fund heir. So he's like 'why try to prove myself to anyone when it just blows up in my face?'
Enter Edith Athalia, someone who comes from a conflicting background of 'parents who want to be apart of my mom's side of the family who are full of old-money wealthy snobs thought I was useless so left me to be raised by my dad's homeowners association suburban side of the family members'. Edith was taught to work for herself and not rely on any man whatsoever.
Edith never thinks about herself or takes care of herself due to feeling guilty if she does anything "selfish" (ie: her own needs, wants, etc). She runs herself ragged after opening her clinic and becoming a doctor.
St. Cloud helps her learn that it's okay to be selfish and want things and need things and to take a step back and be herself (he very much pampers/spoils her on her days off and won't let her lift a finger). And Edith breaks St. Cloud out of his bubble and helps him be confident and love himself, etc. He finds things he's good at or likes because of her and it gives him more to focus on when she's at work. She never babies him or anything like that. She's not over protective unless he's in physical pain (bad pain days or needs her attention for something).
They have independent schedules outside of each other and he's so supportive of her having her job outside of their relationship, etc. Also St. Cloud writes pre-morning texts to her to wake up to, he has flowers delivered to the clinic. he shows up and sweeps her off her feet to lunch or dinner dates. (Hell there are days where he shows up with a picnic basket and they have lunch right there in the waiting room with candles and everything).

His Arching Career + Their Relationship Dynamic As Well:
They are partners in everything they do. They're so in love its crazy. Edith loves listening to him villain monolog and she even walks him through his arching plans and he loves getting feedback from her. (He honestly will just walk around in his villain costume to make her blush & giggle).
St. Cloud treats her like a queen at all times. Like they are husband & wife always. They're a team. He even likes it when she takes charge and doesn't mind at all her being in control if she feels like he needs help or something. They also openly flirt & banter with each other as well as refer to each other as their pet names for each other.
(Man will take her hand & kiss it, etc).
Like -- St. Cloud never lets Edith forget how much he loves her. Like he could be in the middle of tormenting Pete & Billy & pause to call Edith at work & tell her he loves her. He also never prioritizes anything over her. Ever. Like Yeah Billy is his arch but St. Cloud is very devoted to his wife first & foremost. Like...she is the one priceless thing in the world to him. He doesn't fumble that ever.
Edith is super into the rivalry thing and very understanding/supportive (he did join the guild just before they got together. So her seeing him in his villian costume while crushing on him is adorable). And the reason she joined him & Pei in arching was to spend more time together & because she wanted to see him in action. (Also Pei is super devoted to her + Bubo is her little owl sidekick.)
Edith is very much devoted to her husband. She is team st. Cloud 100%. She is his support system both as his wife & partner in crime. She basically draws up his arching ideas & he uses his money to make it happen. But she's also his hype person. Like she never lets Billy & Pete forget her raincloud is in charge, etc.
(Also in general she never lets St. Cloud forget how awesome & amazing he is as a villain or a human being and she adores him for eternity and he's so in love with her that he would chew his own hand off he can't be right next to her~) <33

I think Beaux would see Edith occasionally when theyre badly injured. Since Beaux is a frontline henchman they often use their body as a shield which results in a lot of hard to heal with shapeshifting wounds. I think they'd consider Edith villain adjacent enough to go to her for help :)
Awwwww!!!! Yess!! Edith would happily bandage them up! :) she runs her own clinic and helps basically anyone ♡♡♡ henchmen get sent to her all the time too.
