This salad is great for any fall meal because it has both sweet and savory ingredients, like butternut squash, cranberries, pecans, and creamy goat cheese. It is dressed in balsamic vinaigrette.
Ingredients: 4 cups mixed greens. 1 cup roasted butternut squash, diced. 1/2 cup dried cranberries. 1/2 cup toasted pecans. 1/4 cup crumbled goat cheese. 1/4 cup balsamic vinaigrette dressing.
Instructions: Preheat your oven to 375F 190C. Toss the diced butternut squash in olive oil, salt, and pepper, then spread it on a baking sheet. Roast the squash for 25-30 minutes until it's tender and slightly caramelized. Let it cool. In a large salad bowl, combine the mixed greens, roasted butternut squash, dried cranberries, toasted pecans, and crumbled goat cheese. Drizzle the balsamic vinaigrette dressing over the salad.
