Ingredients: 1 head cauliflower.
Instructions: Wash and dry the cauliflower head. Remove the leaves and cut the cauliflower into florets. Using a food processor or box grater, pulse or grate the cauliflower florets into rice-sized pieces. Transfer the cauliflower rice to a large bowl and discard any large pieces that didn't break down. Line a baking sheet with parchment paper and spread the cauliflower rice in a single layer. Place the baking sheet in the freezer and freeze for about 1-2 hours, or until the cauliflower rice is frozen solid. Once frozen, transfer the cauliflower rice to airtight freezer bags or containers, removing as much air as possible before sealing. Label the bags or containers with the date and store them in the freezer for up to 3 months.
