Ingredients: 150g almond flour. 150g powdered sugar. 110g egg whites aged, room temperature. 40g granulated sugar. 1 tsp instant coffee powder. 1 tsp vanilla extract. 1/4 tsp cream of tartar. Pinch of salt. Frappe Filling:. 100g unsalted butter softened. 200g powdered sugar. 2 tsp instant coffee powder. 1 tsp vanilla extract. 2-3 tbsp heavy cream.
Instructions: Set the oven temperature to 300F 150C and place parchment paper on baking sheets. Pulverize the powdered sugar and almond flour in a food processor. After pulsing until thoroughly mixed, sieve the mixture into a sizable bowl. Beat the aged egg whites until frothy in a different bowl. Beat in the cream of tartar after adding it. Add the powdered sugar gradually while beating until stiff, glossy peaks form. Till everything is well combined, gently fold the egg white mixture into the almond flour mixture. Take care not to blend too much. Split the macaron dough into two halves. Fold in 1 tsp instant coffee powder in one portion and vanilla extract in the other. Spoon each batter into a different piping bag that has a round tip on it. On the baking sheets that have been prepared, pipe tiny macaron shells. Let them lie down for half an hour, or until a layer of skin appears on top. The macarons should be baked for 15 to 18 minutes in a preheated oven, or until the parchment paper comes off easily. Make the frappe filling while the macarons cool. Beat the softened butter until it becomes creamy in a bowl. Mix in heavy cream, vanilla extract, powdered sugar, and instant coffee powder. Beat until fluffy and smooth. Sort the macaron shells into pairs based on their comparable dimensions. Spoon or pipe a tiny bit of frappe filling onto a shell, then cover it with another shell.
